Thim-Thow Thakali Kitchen
A Thakali restaurant in Jhamsikhel, planned for a fast lunch service and a slower evening.
A Thakali kitchen has to turn a full room at midday and still be somewhere to sit at nine. The plan is booth seating down one long wall with loose tables opposite, so the room can be tightened or opened depending on the sitting.
The references are handled at the scale of a detail rather than a theme: pointed niches cut into the wall to hold the brass and clay pots, a slatted timber screen closing the service side, and a fretwork ceiling panel over the centre of the room to keep the light warm and low. The lower wall is finished in a clay-toned plaster that will take being brushed past.
